Quick and Tasty: Mediterranean Chicken Salad
I'm a planner. I start planning vacations up to a year in advance, I plan every day down to the minute in my day designer, and I always plan all my meals at the beginning of each week to make sure I only have to go to the grocery store once.
Despite all my careful planning, I still somehow fail to figure out what I'll eat for lunch on days I work from home. I often find myself scrambling to throw something together at the last minute before my afternoon meetings. The good news is - those last minute thrown-together meals can sometimes lead to the best ideas.
All we have in our house right now are Mediterranean ingredients - tomatoes, basil, olives, feta, chicken, fish, garlic... the best things on earth. You pretty much can't go wrong when you combine these ingredients.
This recipe came together on a day I had leftover chicken, which is something we often have in my house. I chopped up the chicken, added in a few of my favorite things, and decided this will surely be one of my go-to work from home meals whenever we have chicken to use up.
This would also be so easy to make ahead and bring to work during the week! It's light and fresh, and packed with flavor. Yum yum yum. Now I'm hungry again.

Mediterranean Chicken Salad
Servings: 2 Prep Time: 10 Minutes
Ingredients
1 Cup Cherry Tomatoes, chopped
1 lb Cooked Chicken Breast
1/4 Cup Basil, Chopped
1/4 Cup Kalamata Olives, Chopped
1 Clove Garlic, Chopped
2 Tbs Feta Cheese
1 Tbs Olive Oil
Salt and Pepper, to taste
Directions:
1. Shred or dice chicken to desired size.
2. Combine in bowl with cherry tomatoes, chopped basil, olives, garlic, and feta cheese.
3. Drizzle olive oil over the top, and mix until well combined.
You can eat this delicious concoction on it's own, or of course make a sandwich with it. It's great with pita bread.
