Chickpea & Cucumber Salad

For me, lunch is always one of the most challenging meals of the day. If I'm in the office, I don't have my lovely kitchen and stove at my disposal. I need to eat something that requires minimal prep work, and is easy to grab in the morning and run out the door with.

It'd be so easy to just go out for some fast food at lunch, but I like to do my best to stay healthy and save money. That's why I love to make my own salads! There are so many awesome salads out there that are healthy and delicious. They are also super easy to prep on a Sunday, then grab and go during the weekdays.

As I'm sure you've noticed, I've been obsessed with the Nourish Bowls cook book this month. It was a fantastic Christmas gift from my parents, and I am loving all the new and exciting recipes. This week, I gave one of their salads a try! It's quite a mess to make (and eat) thanks to the turmeric, but it's so worth it!

I had some trouble locating some of the ingredients for this recipe, so I made some changes to make it easier for the average-Joe to make. Check out my take on this tasty salad below!

Chickpea & Cucumber Salad

Serves: 1 Prep Time: 15 Minutes

Ingredients:

For the Dressing:

1/2 Tsp ground turmeric

1 Tsp Honey

3 Tbsp Extra Virgin Olive Oil

For the Salad:

1/2 Cucumber

Mixed Salad Leaves

3/4 Cups Cooked Chickpeas

1/4 Cup Cooked Orzo

1 Finely Sliced Apple

Directions:

For the Dressing:

  1. In a small bowl, mix the turmeric, mustard seeds, honey, and olive oil.

For the salad:

  1. Chop 1/2 a cucumber into batons, and place in a bowl with 2 large handfuls of mixed salad leaves.

  2. Add chickpeas, orzo, and sliced apple.

  3. Top with dressing, and enjoy!

I like to quadruple this recipe and place it in four Tupperware containers with the dressing packaged in a separate container. That way, I always have an easy, delicious, and filling lunch I can grab out of the fridge on my way to work! The dressing just gets better the longer it sits.
