Berry & Spinach Smoothie Bowl

My thirst for fruit continues, and this time I've found a recipe that maximizes my berry intake. I'm soooo in love! This recipe is again from the Nourish Bowls cook book, which I just can't seem to get enough of.

Honest review here: while I like the smoothie and berries better in this recipe than the last I shared, I like the granola less. Below, I will not be sharing the granola recipe that is paired with this smoothie in the cook book. I will instead share the granola recipe I used, which is from another recipe in the Nourish Bowls book. It is a sweeter granola, and I think it complements this smoothie quite nicely.

Berry & Spinach Smoothie Bowl

Serves: 1 Prep Time: 15 Minutes Cook Time: 50 Minutes

Ingredients:

For the Granola:

1/2 Cup Coconut Oil

2 Tbsp Honey

1 Cup Rolled Oats

2 Tbsp Quinoa

3 Tbsp Pumpkin Seeds

2 Tbsp Flax Seeds

1/4 Cup Roughly Chopped Almonds

1/4 Cup Dried Cranberries

1 Tsp Cinnamon

For the Smoothie:

1 tbsp Acai Berry Powder (available at Thrive Market)

1 Tbsp Lucuma Powder (also available at Thrive Market)

1/2 Frozen Sliced Banana

1/4 Cup Blueberries

1 tbsp Almond Butter

1 Large Handful Spinach

Almond Milk

Toppings:

Fresh Seasonal Fruit

Flax Seeds

Sesame Seeds

Chia Seeds

Hemp Seeds

Directions:

For the Granola:

  1. Preheat oven to 275.

  2. Melt the coconut oil and honey in a small saucepan for 1-2 minutes.

  3. In a bowl, combine 1 cup rolled oats, 2 tbsp quinoa, 3 tbsp pumpkin seeds, 2 tbsp flax seeds, 1/4 cup almonds, 1/4 dried cranberries, and 1 tsp cinnamon.

  4. Top with melted coconut oil and honey, and stir until well combined.

  5. Line a baking sheet with parchment paper. Spread the granola mixture evenly across the tray, and place in the oven on a middle rack.

  6. Bake for 50 minutes, stirring halfway to prevent burning.

  7. Turn the oven off and cool in the oven with the door cracked for a nice crispy granola.

For the smoothie:

  1. In a blender, combine acai berry and lucuma powder, banana, blueberries, almond butter, spinach, and enough almond milk to reach your desired smoothie consistency.

  2. Blend until smooth.

Finishing touches:

  1. Pour the smoothie mixture in a bowl.

  2. Top with 3 large spoonfuls of granola, as many berries as your heart desires, and sprinkle over some seeds for a delightful crunch. Enjoy!
