Pear & Kale Smoothie Bowl

Despite the insanely cold weather so far this year, I've been craving fresh, summery fruits. I can't get enough of them - our fridge has been loaded with any and every berry you can imagine all month.

I was super excited to discover all the amazing smoothie bowls in the Nourish Bowls cook book (which I talk about in my post last week.) Today I'm going to share my take on one of the recipes from the book! This is actually the very first recipe I made from the Nourish Bowls cook book, and I was instantly in love. It looks complicated at first glance, but ended up being really easy to put together in the morning before work. Just make the granola the night before, and you'll have your breakfast together in no time!

Bonus: The granola makes your house smell amaaazing!!! It also goes great in a yogurt parfait.

Pear & Kale Smoothie Bowl

Serves: 1 Prep Time: 15 Minutes Cook Time: 50 Minutes

Ingredients:

For the Granola:

1/2 Cup Coconut Oil

2 Tbsp Honey

1 Cup Rolled Oats

2 Tbsp Quinoa

3 Tbsp Pumpkin Seeds

2 Tbsp Flax Seeds

1/4 Cup Roughly Chopped Almonds

1/4 Cup Dried Cranberries

1 Tsp Cinnamon

For the Smoothie:

1 Pear, cored

1 Large Handful of Kale (stalks removed)

Splash of Coconut Water

1 Tsp Honey

Toppings:

Plain Yogurt

Pumpkin Seeds

Shelled Hemp Seeds

Dried Cranberries

Directions:

For the Granola:

  1. Preheat oven to 275.

  2. Melt the coconut oil and honey in a small saucepan for 1-2 minutes.

  3. In a bowl, combine 1 cup rolled oats, 2 tbsp quinoa, 3 tbsp pumpkin seeds, 2 tbsp flax seeds, 1/4 cup almonds, 1/4 dried cranberries, and 1 tsp cinnamon.

  4. Top with melted coconut oil and honey, and stir until well combined.

  5. Line a baking sheet with parchment paper. Spread the granola mixture evenly across the tray, and place in the oven on a middle rack.

  6. Bake for 50 minutes, stirring halfway to prevent burning.

  7. Turn the oven off and cool in the oven with the door cracked for a nice crispy granola.

For the smoothie:

  1. In a blender, combine 1 pear, a large handful of kale, coconut water,and honey.

  2. Blend until smooth.

Finishing touches:

  1. Pour the smoothie mixture in a bowl.

  2. Top with 3 large spoonfuls of granola, a dollop of plain yogurt, and sprinkle over some pumpkin seeds, hemp seeds and dried cranberries.
