Slow Cooker French Dip Sandwiches

Crock pots are the best. I'm sure you already know that.  Dump in some ingredients, move on with your day, and come home to a delicious smelling dinner that's all ready to go!  

 

As I mentioned in a recent post, we make French Dip Sandwiches once a year during our ultimate "fall day."  While we are out enjoying fall festivals, picking our pumpkins, and buying the best apple cider money can buy, our french dip is bubbling away in the crock pot.  

 

My favorite thing about this recipe is how incredibly easy it is.  It's also packed with flavor, and SUPER filling.  

Slow Cooker French Dip Sandwich 

Serves: 8          Prep Time: 5 Minutes          Cook time: 8 Hours

 

Ingredients:

 

4 pounds beef chuck roast

2 cans (10.5 ounces each) condensed French Onion Soup 

1 can (10.5 ounces) Beef Consomme

8 slices provolone cheese

Two french baguettes, cut into quarters

 

Directions:

  1. Place the roast in your crock pot and pour the French Onion Soup and Beef Consomme over the top.  

  2. Cover and cook on low for 8 hours.  (Short on time? You can also cook the roast on high for 4 hours.)

  3. Remove 3 cups of the liquid from the crock pot. Add liquid to a small sauce pan and bring to a boil over medium-high heat. Reduce to a simmer and cook until liquid is reduced by half (about 10 minutes.)

  4. Transfer the roast to a plate and shred using two forks.  Return to crock pot with remaining liquid.  

  5. Place the bottom halves of the baguette quarters to a pan. Top each baguette half with shredded beef and provolone cheese, then replace top half of baguette. Cover with foil and bake at 350 degrees for 5 minutes or until the cheese is melted.

  6. Serve immediately with the tasty sauce on the side for dipping.
