Warm and Cozy Crock Pot Ground Turkey Chili

Today is the last day of winter! Normally I dread the end of winter because it’s my favorite season - I love snow, sweaters, heavy coats, blankets, fireplaces, and comfort food. This winter has been a terrible one for winter lovers like me, though. There has barely been any snow, and it’s been HOT - I was sweating to death on Christmas Day. At this point I’m ready to just call it quits on winter and start spring so I can spiff up my yard again.

Since this might be my last opportunity this season, I decided to make a nice hearty chili in the crock pot.

This happens to be the EASIEST recipe ever, and as a bonus it’s healthy and delicious!

Crock Pot Ground Turkey Chili

Serves: 8 Prep Time: 15 Minutes Cook Time: 4 hours

Ingredients:

1 lb ground turkey

1 15 oz can corn drained

1 15 oz can black beans drained & rinsed

1 15 oz can red kidney beans drained & rinsed

1 15 oz can diced tomatoes (I prefer Hunts brand)

1 15 oz can tomato sauce (again - hunts)

1 small white onion, chopped

1 bell pepper, chopped

2 cloves garlic, minced

½ cup water

2 tsp chili powder

2 tsp cumin

A pinch of red pepper flakes (or more if you want!)

Instructions:

1. Add ground turkey, onion, bell pepper and garlic to a fry pan over medium heat and cook for about 5 minutes, until the turkey is browned.

2. Drain the fat and put the turkey and veggie mixture in the crock pot.

3. Pour in the rest of the ingredients, and cook on low heat setting for 4 hours.

...That’s it. SO EASY, RIGHT?

I like to make mine a little bit less healthy and sprinkle on some mexican cheese and a dolop of sour cream. A really big dolop...probably half the container, if I'm being honest. If I have them, I also chop up some scallions for that extra little kick of delish. Time to go eat!!! What are your favorite chili toppings?
